This replaces the good ol' install.sh script, and it allows me to not
only install on a new system, but also upgrade dependencies, repair
broken links, etc. This is certainly not Nix, but at least it's not as
bad as it used to be.

Bring back a hand-rolled GNU Emacs configuration, moving on from Doom
Emacs. This is due some recent regressions I've had with my Doom
configuration that I was unable to debug/fix.
This brings back some much needed simplicity, while having better
knowledge on how to keep things modern and snappy.

It's been ages since I don't do anything serious with Vim. Hence, the
setup for it doesn't have to be as "fancy" as it once was. Removing
Vundle and other stuff makes stuff way simpler, while also removing git
submodules for good.
