emacs: using evil-escape and removing evil-leader

evil-escape will help us removing some dirty code we had for this task (and that it didn't necessarily work everywhere). Moreover, I've pushed my effort about removing evil-leader, which led to some new mappings. That being said, there are still some bindings that are still to be defined.
